13 Jun Vegan Pesto
Here is a versatile ‘Italian Cilantro Pesto’ spread you can use on everything. You can use it as a condiment for pasta, spread it on bread, crackers or wraps, boost the flavor of lean meats, or simply make a healthy dip for your veggies.
Ingredients: (Makes roughly a cup.)
2 cups of fresh basil
1/4 cup fresh cilantro
1/2 cup shelled pine nuts
2 cloves fresh garlic
Extra virgin olive oil, as needed
Salt and Pepper to taste
Combine the herbs, garlic, and nuts in a food processor. Process and slowly add the olive oil until it becomes a smooth, light paste. Season with salt and pepper, to your taste. Store in a glass jar chilled for an hour to enrich its flavor before serving. Store in refrigerator.
