Ingredients

  • 2 Pounds of Turkey Cutlets
  • 2 Cups Spinach
  • 1/2 Onion Sliced
  • Spices of choice (see option below)
  • 1 Tbsp Olive Oil
  • 1 Package of Mushrooms
  • 1/4 Cup Vegetable Broth
  • Brown Rice

Instructions

  1. Start your rice – I love my rice cooker. It’s simple and fast.
  2. Place Olive Oil in pan and saute onion
  3. Add seasoning ( I love to use organic no salt spice from Costco and turmeric along with salt and pepper)
  4. Add turkey cutlets and brown both sides
  5. Cut up Spinach and Slice Mushrooms and place on top of turkey cutlets
  6. Add Vegetable Broth
  7. Place lid on top and let simmer for 10 minutes
  8. Put rice on plate and layer turkey on top along with the onion, mushroom and spinach mix and serve
