Almond Flour Oatmeal Cookies

Ingredients
2 cups rolled oats – gluten free
1 cup almond flour (not almond meal)
½ cup coconut flakes or shredded coconut
2 tsp cinnamon
½ tsp sea salt
¾ cup maple syrup
¼ cup coconut oil (melted)
1 tsp vanilla extract
¾ cup dark chocolate chips
¾ cup toasted walnuts chopped (or any nut)

Directions
Preheat oven to 350 degrees
Combine all dry ingredients (minus chocolate chips & walnuts) in a bowl and mix
Combine all wet ingredients in a bowl and whisk together
Add dry ingredients and mix well
Stir in chocolate chips and walnuts
Use a cookie scoop (I use a large ice cream scoop) onto a parchment lined cookie sheet and flatten slightly
Bake about 15 minutes or until golden brown.
Let cool 10 minutes and enjoy

Note: Can use raisons, dried fruit. etc., in place of chocolate chips. Fun to play around with the recipe.
